Peanut Butter Tray Slice

225g melted butter

215g digestive biscuits (half a packet)

260g smooth or crunchy peanut butter ( I used Pics)

300g icing sugar

300g dark chocolate

Sprinkle of desiccated coconut - or not, you choose

Melt the butter on low, blitz the biscuits in the food processor, mix into the butter with the peanut butter and icing sugar.  Line a baking tray, press the mixture into the tray and chill in the fridge.

Melt the dark choc add a drop of sunflower oil (or I used canola oil) to stop it from cracking.  Pour melted chocolate over the slice and smooth out.  Sprinkle with coconut if you like and back into the fridge for about 4 hours - 2 will do.

Ours lasted less than 2 days in the fridge.
